Thoroughly pat the chicken wings dry with paper towels, Preheat oven to 450°F. Line cookie sheet with aluminum foil and place the wire rack on top of it. Spray with cooking spray.
Place wings in a large bowl and sprinkle with the dry ingredients. Toss to combine, then place wings on the prepared racks.
Bake the chicken for 25 minutes then flip them over and bake for another 25 minutes.
Remove chicken from the wire rack to a large bowl and mix in some of your favorite Buffalo wing sauce. Serve with your favorite dipping sauce.

I like Original Anchor Bar Buffalo Wing sauce (medium) and for dipping I use Marie's Chunky Blue Cheese Dressing + Dip. Great with raw carrot and celery sticks on the side.The original recipe included a recipe to make your own buffalo sauce but it's easier just to use one of your favorites :) Also I doubled up on the dry ingredients, as I found I didn't think there was enough.
