Wagons Ho Pumpkin Bread

I got this recipe from my real estate agent, Joyce Weiner, when we moved to Massachusetts. She gave us a loaf after closing and my son loved it. According to her, she got the recipe from one of the farmer's wives when she went on a covered wagon trip in Kansas in the 1970's. She enhanced it by adding the chocolate chips 🙂
Ingredients
- 3½ cups flour
- 3 cups sugar
- 2 tsp baking soda
- 1½ tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp allspice
- 1 cup mini chocolate chips
- 1 cup nuts chopped
- 1 cup vegetable oil
- 4 eggs
- 2 cups canned pumpkin (15 oz can)

Instructions
- Preheat oven to 350°F. Mix together the dry ingredients. In a separate bowl combine the oil, eggs, pumpkin and water.
- Add wet mixture to the dry ingredients and mix until smooth – This is too much for my KitchenAide mixer, so I just stir by hand in a large bowl, otherwise I get flour all over…
- Divide batter into 5 small loaf pans (6" x 3.5" x 2") and bake for 60-65 minutes until a toothpick comes out clean.
