Almond Spritz Cookies

  • 1 Spritz gun

Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • ¾ tsp almond extract
  • ½ tsp salt
  • 2 cups flour
  • ¼ cup almond flour
  • decorative sugar or sprinkles for decorating

Instructions
 

  • Heat oven to 350℉. Using a stand mixer, beat the butter and sugar on medium speed until light and fluffy, 2-3 minutes. Reduce speed to low, add the egg and almond extract, and mix until well-combined and smooth.
  • With the speed still on low, gradually add both flours and salt until just incorporated
  • Fill a cookie press with dough and press or pipe the dough onto ungreased cookie sheets, leaving about 1 inch between cookies. Sprinkle with decorative sugar.
  • Bake until firm to the touch and golden brown on the edges 12-14 minutes. Remove to cool on a wire rack.

Notes

My mom used to make spritz cookies every Christmas and I have tried for years to find a recipe that I could successfully make them and actually get the cookie gun to work and stick to the pan. This recipe finally did it, though there is some variation of success with different designs.  The Christmas tree and 5 leaved flowers worked the best.  One click of the gun and done! My mom also used to decorate after cooling with a powder sugar icing which was also delicious.
