Gujerati-style green beans (Gujerati sem)

Simple, delicious way to make green beans. Modified from recipe in Madhur Jaffrey's Indian Cooking (my favorite Indian cookbook!)
Ingredients
- 1 lb fresh green beans
- 4 Tbs vegetable oil
- 1 Tbs whole black mustard seeds
- 4 cloves garlic peeled and minced
- ¼ tsp crushed red pepper flakes
- 1 tsp salt
- ½ tsp sugar
- freshly ground pepper
Instructions
- Trim beans and cut them into 1 in lengths. Blanch the beans by dropping them into a pot of boiling water and boil rapidly for 3-4 minutes. Drain immediately in a colander and rinse under cold, running water. Set aside.
- Heat the oil (in the pot you cooked the beans in) over medium flame. Add the mustard seeds, garlic, crushed pepper flakes, salt and sugar stirring until garlic is light brown.
- Return the green beans to the pot and stir to mix. Turn heat to medium-low. Stir and cook the beans for 7-8 minutes absorbing the flavor of the spices. Season with black pepper and serve.
