Far Eastern Kebabs

An old recipe that I had from my mother, quick, full of flavor and easy
Equipment
- 6-8 skewers
Ingredients
- 3-4 boneless, skinless chicken breasts cut in bite sized pieces
- ½ tsp ground ginger
- ¼ tsp cayenne pepper
- â…› tsp powdered mustard
- â…› tsp ground cardamom
- â…› tsp turmeric
- 1 tsp curry powder
- 1 Tbsp yogurt or milk
- 2 tsp lemon juice
- 1 tsp salt
- 1 onion cut into wedges
- 1 pk whole mushrooms
- 1 pk pineapple cut in bite sized pieces
- 1 bell pepper (whatever color you like) cut in pieces
Instructions
- Mix together all the ingredients but the last 4 and let sit at room temperature for an hour. String all the ingredients on skewers, alternating pieces.
- Set on shallow pan with Al foil on the bottom to aid in cleanup. Broil on high for 15-20 minutes turning halfway through.
Notes
Original recipe call for Lemons as well, but you can really use whatever vegetables, or fruit you like on it 🙂
